It's incredibly satisfying to always have healthy snacks in your fridge or freezer. Homemade snacks are just so much better because you know exactly what's in them. No junk, just genuinely good ingredients. This time, I'm making my healthy bounty bars, which give you extra fiber and good bacteria, combined with shredded coconut and a layer of dark chocolate. With only four ingredients in the filling, you have a snack that's just as delicious as the real bar, but without unnecessary sugars.

Ingredients

What do you need?
Quantity: 6 bars

For the coconut filling
2 pots of Activia with fiber
150 g desiccated coconut
1 tsp vanilla extract

For the chocolate layer
250 g dark chocolate (min. 70% cocoa), melted

2 pots of Activia with fiber

Preparation method

Mix the Activia, shredded coconut, and vanilla extract thoroughly until you have a cohesive, sticky mixture.

Divide the mixture into 6 equal parts and shape them into bars with your hands, resembling a real Bounty bar.

Place the bars on a plate lined with baking paper and let them set in the refrigerator for at least 1 hour, or put them in the freezer if you want quicker results.

Melt the dark chocolate au bain-marie or in the microwave.

Dip the bars in the melted chocolate, let them drain well, and place them back on the plate.

Tap the side of a fork gently into the chocolate 4 to 5 times on each bar to create the typical striped pattern.

Put the bars back in the refrigerator and let the chocolate harden completely for about an hour before eating them.

Tips

  • I always use chocolate with a minimum of 70% cocoa, so the bar stays truly healthy without too many added sugars and fats.
  • You can also replace coconut with grated almonds and chia seeds, for example.
  • Want to make them extra decadent? Sprinkle the bars with a pinch of Maldon salt just before the chocolate completely hardens.
  • In the refrigerator: up to 4-5 days in an airtight container.
  • In the freezer: perfect for storing up to 2 months, ideal for always having a healthy snack on hand. Simply let them come to room temperature for 5-10 minutes after taking them out of the freezer.
