Overnight oats:
4 apples (cut into small cubes, with skin)
1 teaspoon cinnamon powder
200 g oats
400 ml plant-based milk (e.g. almond milk)
250 g plant-based yogurt
1 teaspoon agave syrup (or honey/coconut blossom sugar)

Coconut crumble:
150 g shredded coconut
1 tablespoon agave syrup
1 tablespoon coconut oil
1 pinch of salt

Overnight oats:

Preparation method

How do you make this?

Prepare the baked apple: Cut the apples into small cubes.

Heat a bit of coconut oil in a pan and add the apple cubes and cinnamon.

Cook until the apples are golden brown and lightly caramelized. Set aside.

Make the overnight oats: Mix half of the baked apple with the oats, plant-based milk, yogurt, and agave syrup.

Divide the mixture into glasses or bowls, cover, and place in the refrigerator overnight.

Prepare the coconut crumble: Mix the shredded coconut, agave syrup, coconut oil, and a pinch of salt in a bowl.

Spread the mixture on a baking sheet lined with parchment paper.

Bake for 10 minutes in a preheated oven at 165°C, until golden brown. Let cool and store in a sealed jar.

Serve: Top the overnight oats in the morning with an extra spoonful of plant-based yogurt, the remaining baked apple, and the coconut crumble.

Serve immediately and enjoy!

Tips

Variation: Replace the apple with pear or banana, and experiment with nuts instead of coconut. Extra taste: Add a pinch of nutmeg or vanilla extract to the fried apple. Save: You can keep the coconut drumme in an airtight pot for a maximum of a week.
