Ingredients

What do you need?
Quantity: 3P

For the croissants 
1 piece of rectangular puff pastry (approx. 15 x 25 cm)
2 tbsp apricot jam
2 tsp harissa
80 g grated cheddar
4 slices of Serrano ham (or other raw ham)
1 egg yolk + small dash of milk (dorure)
1 jar of sour cream
Flower to pollinate

For the apple-miso chutney (± 2 jars) 
3 medium apples (e.g. Boskoop), peeled and finely diced
1 onion, finely chopped
1 tbsp white miso (or red miso for a more intense flavour)
50 ml apple cider vinegar
50 g brown caster sugar or honey
1 tsp grated ginger
0.5 tsp cinnamon
1 tsp fennel seeds
1 tsp mustard
1 tbsp soy sauce
50 g raisins or dried cranberries
1 tbsp olive oil
Pinch of salt and pepper

Preparation method

How do you make this?

Croissants 

  1. Prepare: Lightly dust your work surface with flour. Roll out the puff pastry.
  2. To smear: Spread the apricot jam evenly to the edges. Spread the harissa over it and sprinkle with grated cheddar.
  3. Cutting: First cut the dough in half horizontally, then both halves in half again. Cut each piece diagonally, so that you get 8 triangles.
  4. Fill and roll: Make a small slit on the wide side of each triangle and pull open slightly. Place half a slice of ham on top and roll up into a croissant.
  5. Finishing: Brush the croissants with the icing.
  6. Baking (Airfryer): Place the croissants in the basket and bake them for 20 minutes at 170°C with theSteam & Fry-function.

Apple-Miso Chutney (Airfryer) 

  1. Fry the onion: Mix the chopped onion with olive oil in an airfryer-proof container. Bake for 5 minutes at 200°C (small basket).
  2. Add: Add the apples and all other ingredients and mix well.
  3. Yarn: Bake for 30 minutes at 160°C.
  4. Synchronize: At the same time, set the large basket to 20 min at 170°C for the croissants. Use the synchronization function if available.
  5. Finishing: Stir the chutney halfway through. Then let it cool and store in a sterilized jar.

Tips

  • Usagered misofor a deeper, more intense umami flavor.
  • Add a finely choppedchili pepperadd if you like a little more spice.
  • This chutney is also delicious withold cheese, grilled chicken or on asandwich with goat cheese.
