24 black tiger shrimp
12 slices of smoked bacon
2 tbsp olive oil
1 large shallot
4 cloves of garlic
200 ml white wine
70 g tomato paste
400 ml passata
125g mascarpone
1 tsp curry powder
1 tsp chili powder or flakes
4 spring onions (for garnish)

400 ml passata
125g mascarpone
1 tsp curry powder
1 tsp chili powder or flakes

Preparation method

How do you make this?

Peel the shrimp, leaving the last part of the tail on and remove the intestinal tract. Season with pepper and salt, wrap the shrimp in half slices of bacon.

Sauté the chopped shallot and garlic in the oil, add chili powder, curry powder, and tomato paste. Sauté briefly, deglaze with white wine, let it reduce, and add passata. Let it simmer until the desired thickness is reached.

Stir in the mascarpone, mix until smooth sauce.

Grill the shrimp on both sides and serve with the sauce. Garnish with chopped spring onion.

Tips

For a spicy sauce, add extra chili powder. Serve with fresh bread to enjoy the sauce.
