Ingredients

What do you need?
Quantity: 20 cookies

Dry ingredients
350 g flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tbsp ground ginger
1 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp nutmeg

Wet ingredients
100 g soft unsalted butter
100 g brown sugar
50 g blonde sugar
1 egg
120 ml dark molasses (or syrup as an alternative)
1 tsp vanilla extract

For the finishing touch
Royal icing (optional):
1 egg white,
200 g icing sugar,
few drops of lemon juice,
possibly some natural coloring if you like
Decorative sugar, mini smarties or edible pearls

Preparation method

How do you make this?

Mix all in a bowl dry ingredients: flour, baking powder, baking soda, salt and spices.

In another bowl, beat the butter, brown sugar and granulated sugar creamy.

Add it egg, the molasses and it vanilla extract and mix until smooth.

Gradually add the dry ingredients to the butter mixture and mix until a stiff dough forms.

Form the dough into a disk, wrap in plastic wrap and let rest in the refrigerator for at least 1 hour.

Preheat the oven to 180°C (top and bottom heat).

Roll out the dough to about 0.5 cm thickness and cut out men with a cookie cutter.

Place the cookies on a baking tray lined with baking paper and bake for 8 to 10 minutes.

Let cool on a rack. Decorate as desired with royal icing and decorations.

Tips

  • Let kids decorate their own cookies for extra fun.
  • Add a pinch of black pepper for extra spice if desired.
  • Use syrup if you can't find molasses, but the flavor will be a little less intense.
