+_600 g melon, Cavaillon
2 large tomatoes
1 clove of garlic
2 tbsp sherry vinegar
4 tbsp olive oil
Juice of 1 lemon
1 tsp salt
Generous pepper from the mill
A few drops of Tabasco to taste

Garnish
1 burrata in pieces
Radishes
10 mint leaves finely chopped
2 spring onions finely chopped
Olive oil

Put all the ingredients for the gazpacho in a blender.

Mix for 2 minutes, season to taste, put in the fridge for 2 hours.

Stir the gazpacho, divide bowls, finish with the with garnish.

Tips

  • You can also use other fruits in your gazpacho, such as watermelon. But strawberries and peaches are also delicious.
