Preparing the toasts: Cut four slits in the edge of each slice of bread, as if almost loosening the sides, but not quite. This way you can fold the toast into a star shape.
Brush each slice with melted butter and place a slice of goat cheese on top.
Sprinkle over the spice mixture and brush lightly with melted butter.
Baking the toasts: Place the toast on a baking tray and bake in a preheated oven at 180°C for 10 minutes, until golden brown and crispy.
Preparing mushrooms: Cut or tear the mushrooms into pieces.
Melt a knob of butter in a pan. Finely chop or grate the garlic and fry in the butter until translucent (do not let it colour).
Add the mushrooms, season with salt and pepper and fry until golden brown.
At the end add the chopped parsley.
Finishing and serving: Divide the fried mushrooms over the warm toast with goat cheese.
Finish with a little cressonette or microgreens, extra melted butter and a pinch of lemon zest for a fresh touch.
Tips
- Don't have a goat cheese fan at home? Replace it with mozzarella or another soft melting cheese.
- Adding truffle oil to the mushrooms gives a luxurious touch.
