Preparation method

How do you make this?

Prepare the endive
Wash the chicory thoroughly. Cut each head in half and remove the tough core at the bottom. Then finely slice the endive.

Mix the base
Place the finely sliced endive in a large mixing bowl. Add the fresh mayonnaise and gently mix so that each piece of endive is lightly coated.

Add extra ingredients (optional)
Want extra flavor and crunch? Stir in finely chopped apple, chopped nuts (such as walnuts or hazelnuts), and some chopped chives.

Season
Season the salad with freshly ground salt and pepper. Taste and adjust as needed.

Serve
Spoon the endive salad into a nice bowl or serving dish. Serve it as is, or as a side dish with meat, fish, or fries.

Tips

Want to prep the salad in advance? Slice and rinse the endive, then let it drain thoroughly. Mix in the mayonnaise and other ingredients only at the last moment for a fresh and crunchy salad.
