4 heads of ground chicory
1 onion
1 tsp strong mustard
2 tbsp fresh mayonnaise

Preparation method

How do you make this?

Cut the celeriac and endive
Peel the celeriac and cut it into fine julienne strips. Slice the endive thinly so that its bitterness complements the texture of the celeriac.

Add the onion
Finely chop the onion and add it to the bowl with the celeriac and endive.

Make the dressing
Mix the mayonnaise with coarse mustard in a separate bowl. Season with salt and pepper and stir until smooth.

Assemble the salad
Pour the dressing over the endive, celeriac, and onion. Mix well so all the vegetables are evenly coated with the sauce.

Finish and serve
Let the salad rest briefly so the flavors meld. Serve chilled or at room temperature as a side dish with meat or fish.
