500 g pastry flour
500 ml lukewarm milk
3 eggs
30 g fresh yeast
2 packets of vanilla sugar
1 tbsp fine sugar
1 pinch of salt
Powdered sugar for finishing

Mix the yeast into the milk. Put the flour, vanilla sugar, and salt in a large bowl and mix well together. Separate the eggs, beat the yolks into the milk. Pour into the flour and keep stirring in the middle with a whisk to mix more flour into the mass, you will have a thick firm mass, so keep whisking to mix out all the lumps.

Beat the egg whites with the sugar until stiff and fold into the mixture in 2 batches. Let rise for 1 hour.

Heat your deep fryer to 180° and remove the basket. Scoop about a spoonful or 5 of dough into your pot, let them color, turn them over and color the other side as well. Carefully turn all the oliebollen so they become nicely golden brown all around. Continue to fry the dough.

Sprinkle with powdered sugar, serve immediately.

Tips

  • You can bake oliebollen in beef tallow or in frying oil.
  • With this dough, you can also make apple fritters or mix in rehydrated raisins, as they often do in the Netherlands.
