5 cl vodka
2 cl fresh lime juice
1 cl sugar syrup
ginger beer to taste

non-alcoholic version:
3 cl orange juice
2 cl lemon juice
1 cl sugar syrup
ginger beer to taste

Skewer of haloumi and avocado
300 g haloumi
1 avocado
splash of olive oil
zest of 1 orange
juice of ½ orange
1 teaspoon cumin
2 tablespoons olive oil
pepper

Skewer of octopus rings with cherry tomatoes and grilled bell pepper
6 octopus rings
12 cherry tomatoes
1 grilled red bell pepper (jar)
zest of 1 lemon
splash of olive oil
pepper

Sausage sandwich with pesto
12 Spanish sausages of choice
1 baguette (sourdough or whole grain)
a handful of roasted pine nuts
a handful of parmesan
a handful of arugula
½ bunch of basil
juice of 1 lemon
2 dl olive oil
pepper

How do you make this?

Preparation method

  • Fill a tumbler or copper cup with ice. Pour the vodka, lime, and syrup over it. Stir and top off with ginger beer.

Finishing

  • Crushed blackberry with chocolate bitters
  • Pickled roasted red pepper
  • Crushed strawberries
  • Roasted rosemary and mint
  • Here you can also get creative with the garnishes, super! The yellow pepper is my favorite. 😉

Bites

  • If you have Hannah Van Ongevalle nearby, it's best to prepare some snacks. 😊 I love simple and delicious. A fresh pesto with sausages on toast and grilled halloumi and avocado and squid is all we need!

Preparation method

  • Skewer of halloumi and avocado
  • If you use wooden skewers, it's best to soak them in water for a few hours before preparing the skewers so they don't burn while grilling.
  • Cut the halloumi and avocado into equal pieces and alternately thread them onto a skewer. Do this on a board so that the halloumi and avocado touch the board, this way everything will grill nicely.
  • Place the grilled skewers on a platter and make a dressing from the olive oil, zest of one orange, juice of half an orange, crushed cumin, and pepper. Drizzle it over.
  • Skewer of squid rings, cherry tomatoes, and grilled pepper
  • Cut the squid rings in half so you have a strip. Cut the grilled pepper into equal pieces.
  • Thread the squid strip onto the skewer first and make a snake with alternating a tomato and grilled pepper. Grill them for about 2 minutes on both sides.
  • Sausage sandwich with pesto
  • Grill the sausages on the BBQ and meanwhile cut the baguette into equal slices. Grill the baguette on both sides.
  • Make pesto from the roasted pine nuts, basil, grated parmesan, arugula, lemon juice, pepper, and olive oil. Blend everything into a pesto. If the pesto is too thick, you can add a splash of olive oil.

Finishing

  • Spread the rolls with pesto and place a sausage on top. Finish with a leaf of arugula and a toothpick.
  • Finish the avocado skewers with the dressing. It can be generously drizzled.
  • Finally, finish the squid skewers with olive oil, pepper, and lemon zest.
