Add the gin to a cocktail shaker.
Add the Noilly Prat, simple syrup, lime juice, and lemon juice.
Add the raspberries and muddle them well.
Add the egg white.
Add 1 ice cube and shake vigorously to achieve the right texture.
Add more ice and shake again until well chilled.
Strain the cocktail to remove any raspberry seeds.
Shake again without ice to create a nice foam layer.
Pour the cocktail into a chilled coupe glass.
Make sure you finely stamp the raspberries for an optimal taste. Double shaking (with and without ice) provides an extra creamy texture through the protein. You make sugar syrup (Simple Syrup) easy by combining equal parts of water and sugar and blending with a hand mixer until the sugar is completely dissolved.
