What absolutely can't be missing during a Red Devils football night? Buffalo wings, of course! Together with Frank Boeckx, I made a slightly lighter version of this American classic, without compromising on taste. Thanks to the Philips Airfryer Mega Basket with steam function, the chicken wings first remain deliciously juicy inside, after which they get an extra airfry treatment for that irresistibly crispy crust.

The dip also got a fresh makeover. Instead of a heavy mayonnaise base, I use cottage cheese, combined with spicy blue cheese and fresh chives. The result? A surprisingly light blue cheese dip that perfectly complements these spicy buffalo chicken wings. Ideal to serve with the mini hamburgers and lazy dumplings during an evening cheering for the Red Devils. Not a fan of blue cheese, then try the ranch!!

Ingredients

What do you need?

Buffalo chicken wings
1.2kg chicken wings
1 tsp garlic powder
2 tsp chili flakes
1 tsp paprika powder
1 tsp smoked paprika powder
1 tbsp baking powder
Zest of 1 lemon
Juice of 1 lemon
1 tbsp olive oil
Pepper from the mill
Salt from the mill

Blue cheese dip
200 g cottage cheese
100 g Roquefort sauce
70g gorgonzola
½ bunch chives
2 to 3 tbsp water
Pepper from the mill
Pinch of salt

1.2kg chicken wings
1 tsp garlic powder
2 tsp chili flakes
1 tsp paprika powder
1 tsp smoked paprika powder
1 tbsp baking powder
Zest of 1 lemon
Juice of 1 lemon
1 tbsp olive oil

200 g cottage cheese
100 g Roquefort sauce
70g gorgonzola
½ bunch chives
2 to 3 tbsp water

Buffalo cauliflower bites
1 large cauliflower, in florets
1 tsp garlic powder
2 tsp chili flakes
1 tsp paprika powder
1 tsp smoked paprika powder
1 tbsp baking powder
Zest of 1 lemon
Juice of 1 lemon
1 tbsp olive oil
Freshly ground pepper
Freshly ground salt

Preparation method

How do you make this?

Cut the chicken wings at the joint to get nice, even pieces.

Place the chicken wings in a large bowl.

Add garlic powder, chili flakes, paprika powder, smoked paprika powder, baking powder, lemon zest, lemon juice, olive oil, pepper, and salt.

Mix everything thoroughly so that each piece of chicken is covered with the marinade.

Let marinate for at least 4 hours in the refrigerator. Marinating overnight will give even more flavor.

Arrange the chicken wings side by side in the Philips Airfryer Mega Basket.

Select the Steam Fry function and cook the wings for 20 minutes.

Meanwhile, prepare the dip.

Place the cottage cheese, Roquefort gorgonzola, water, chives, pepper, and a pinch of salt in a food processor.

Blend until a creamy dip forms. If necessary, add a little extra water for the desired consistency.

Remove the chicken wings from the air fryer and turn them over.

Switch to the regular Airfry function.

Bake for another 8 to 10 minutes at high temperature until the wings are golden brown and crispy.

Spoon the blue cheese dip into a small bowl.

Arrange the buffalo wings around the dip on a large platter.

Garnish with extra finely chopped chives and serve immediately.

Tips

  • Baking powder is the key to extra crispy chicken wings.
  • Preferably marinate the chicken overnight for maximum flavour.
  • Use a pungent blue cheese like Roquefort or Gorgonzola for extra character.
  • Serve with extra lemon wedges for a fresh touch.
  • Combine these buffalo wings with the mini burgers and lazy dumplings for a complete Red Devils aperitif.
  • Storage:
    Refrigerator: Store the baked chicken wings covered in the refrigerator for a maximum of 2 days.
    Freezer: Marinated or baked chicken wings can be frozen for up to 3 months.
  • Reheating: Reheat in an air fryer at 180°C for 5 to 7 minutes until crispy again. Store the dip separately and serve cold.
