Mash the 300 grams of banana into a puree in a large bowl. Add the grated ginger, salt, cinnamon, and baking powder and mix everything well together.
Beat the eggs and mix them into the banana mixture. Then add the oats and shredded coconut and mix until you have a homogeneous batter.
Fold the pieces of dark chocolate into the batter.
Grease a baking pan or line it with baking paper. Pour the batter into the pan.
Cut the extra banana in half lengthwise and place it cut side up on the batter. Lightly brush with some oil.
Bake the banana bread for about 40 minutes in a preheated oven at 180°C.
Let the bread cool before slicing. Serve warm or cold.
Tips
Also delicious in the toaster with some yogurt, fresh fruit and peanut butter. You can also make the bread with fewer carbohydrates by replacing the oatmeal with almond flour.
