6 pieces of blue cheese (such as gorgonzola, roquefort, …)
6 sprigs of rosemary

a handful of almond flakes

This recipe is completely vegetarian. Optionally choose a vegetarian blue cheese without animal rennet.

Preparation method

How do you make this?

Preparation of figs: Preheat the oven to 180°C. Cut off the hard top of the figs and make crosswise cuts until just not at the bottom – they should open like a flower. Set aside.

Preparing puff pastry: Cut the puff pastry into 6 strips of 2 cm by 15 cm. Make a few small slits along the length of the strips for extra effect (optional). Wrap each fig at the bottom in a strip of puff pastry and press the dough well so that the fig remains stable in the baking dish.

Filling and finishing: Place a piece of blue cheese in the center of each opened fig. Insert a sprig of rosemary into the opening. Drizzle olive oil over each fig, followed by a teaspoon of honey. Sprinkle almond flakes on top and season with pepper and a pinch of salt.

Baking: Place the figs in a baking dish and bake for 20 to 25 minutes at 180°C, until the puff pastry is golden brown, the cheese is melted, and the figs are soft and juicy.

Serving: Serve warm, optionally with some extra honey and a piece of fresh bread or ciabatta.

Tips

  • Choose ripe but firm figs – overripe figs fall apart quickly.
  • Optionally replace blue cheese with goat cheese or brie if you prefer a milder flavor.
  • Add a teaspoon of balsamic cream after baking for extra depth.
