For the meatballs:
400 g chicken mince
400 g mixed mince
2 tbsp fish sauce
2 cloves garlic
1 chili pepper
2 cm ginger
0.5 lemongrass (frozen)
A few sprigs of fresh coriander
2 tbsp peanut oil

For the sauce:
2 tbsp peanut oil
2 cloves garlic
1 sweet onion
Chili pepper (optional)
2 tbsp fish sauce
250 g diced tomatoes (canned)
250 ml tomato passata
1 tbsp red curry paste
400 ml coconut cream

For the garnish:
1 avocado
A few sprigs of coriander
1 lime

For the rice:
250 g rice (basmati)
1 stalk lemongrass
Salt

Preparation method

How do you make this?

Finely chop garlic, coriander, and chili pepper. Grate ginger and lemongrass. Mix these ingredients into the mince, season with fish sauce, and form into balls.

Heat oil in a pan, fry the meatballs until nicely browned, remove them from the pan and set aside. Use the same pan for the sauce.

For the tomato sauce: Sauté onion, garlic, and chili pepper in oil. Deglaze with fish sauce, add diced tomatoes, passata, curry paste, and coconut cream. Add the meatballs and let simmer briefly.

For the garnish: Cut lime into wedges, finely chop coriander, and scoop out the flesh from the avocado.

For the rice: Cook the rice with a stalk of lemongrass and salt according to the package instructions.

Serve the meatballs with sauce, rice, and finish with coriander, lime, and avocado.
