You already know it: me and kefir, it's a real love story. I love that mild, creamy and fresh taste. And because I want to show you how versatile kefir is, I use it to make these kefir pancakes. Of course, a little more kefir goes on top, together with some fresh passion fruit. And that's how you get an incredibly healthy breakfast.

Separate the egg. Put the flour, the yolk and the kefir in a bowl, together with the vanilla, baking powder and the sweetener if you're using it. Whisk everything well into a smooth batter.

Whisk the egg white in a clean bowl with a pinch of salt until stiff.

Gently fold the egg white into the batter in two batches, so the air bubbles are preserved.

Make the sauce: halve the 6 passion fruits, scoop the pulp into the 180 ml kefir and stir.

Place a pan that has a fitting lid over medium heat, not too hot. Lightly grease it with ghee, coconut oil or butter.

Spoon 3 to 4 dollops of batter into the pan and let them cook gently for 2 to 3 minutes, until you see bubbles and the edges become dry.

Flip the pancakes, pour a teaspoon of water into the pan and immediately put the lid on. Let them cook for another 2 to 3 minutes. The steam keeps them nice and fluffy.

Repeat with the rest of the batter, lightly greasing the pan each time.

Mix everything for the passion fruit sauce together.

Stack the pancakes on plates, cut open the extra passion fruit and drizzle the kefir passion fruit sauce over the top.

Tips

  • I always whisk the egg white in a completely grease-free bowl. Even a tiny bit of yolk or fat and it simply won't get stiff.
  • No passion fruit? Then I add fresh red berries or some grated lime to the kefir, also super fresh.
  • Keep the heat really at medium. Too hot and they brown too quickly on the outside while they're not yet cooked inside.
