Step-by-step Sweet Potato Prep

Dividing the batch  Divide the sweet potatoes into three equal portions. You can weigh them or simply divide them visually. 

Sweet potato puree 

  1. Peel the first portion of sweet potatoes and cut them into pieces. 
  2. Steam the pieces until they are cooked through. 
  3. Mash with the butter and gradually add the vegetable broth until you have a creamy puree. 
  4. Season with pepper and salt. 
  5. Let cool and store in an airtight container in the refrigerator or freezer. 

Sweet potato cubes (tikka masala) 

  1. Peel the second portion of sweet potatoes. 
  2. Cut into even cubes. 
  3. Place the cubes in a box or freezer bag and store in the refrigerator or freezer until use. 

Sweet potato fries (healthy kapsalon) 

  1. Scrub the third portion of sweet potatoes thoroughly. Peeling is not necessary. 
  2. Cut into slices of about 0.5 cm, then into fries. 
  3. Rinse the fries well and dry thoroughly. 
  4. Place them in a large storage container, add olive oil, pepper, salt, and herbs to taste. 
  5. Close with a lid and shake so that everything is well coated with oil and herbs. 
  6. Store in the refrigerator or freezer until use. 

Storing and reheating

Choose which dish you want to eat first.
Keep one portion in the refrigerator, the other 2 you put in the freezer for the next weeks.

  • Refrigerator: up to 3 days in an airtight package 
  • Freezer: up to 3 months in freezer bags or well-sealed containers 
  • Reheating
  • Puree: thaw in the refrigerator, reheat in the microwave or in a pan with a splash of milk or broth. 
  • Cubes: add directly from the freezer to the dish to cook through. 
  • Fries: bake from frozen in the oven or air fryer, allowing for a slightly longer cooking time.

1. Do I need to pre-cook the sweet potatoes for the tikka masala?  No, that is not necessary. The cubes will cook in the sauce while it is cooking. 

2. Can I make the puree without butter?  Yes, replace the butter with olive oil or a plant-based alternative for a vegan version. 

3. How do I make my fries extra crispy?  Soak them first in cold water, then dry them well and bake them in a hot oven or air fryer. 

4. Can I freeze the cubes raw?  Yes, that is perfectly fine. Just make sure they are airtight to prevent freezer burn. 

5. How do I use the puree later in the week?  You can serve it as a side dish with fish, meat, or vegetarian stews. Also nice in a casserole.
