Saladย 1 cucumber
1 avocado
250 g smoked salmon, cut into strips
4 tablespoons cottage cheese
1 red onion, sliced into thin half rings
2 teaspoons capers
2 teaspoons sesame seeds
Freshly ground black pepper
1/2 bunch of dill

Optional:

1 teaspoon bagel spices
Zest and juice of ยฝ lemon

Make it veggie!

Replace the smoked salmon with cubes of marinated smoked tofu or strips of smoked carrot (carrot lox) for a similar smoky flavor, or sautรฉed shiitake.

Preparation method

How do you make this?
  1. Slice the cucumber and red onion into thin slices with your food processor and place them directly into the jars or sturdy sealed lunch containers.
  2. Add the capers, sesame seeds, pepper, zest, cottage cheese, and dill.
  3. Cut the avocado into cubes and place them on top.
  4. Distribute the smoked salmon over the avocado.
  5. Close the jar.

Tips

  • You can replace the cottage cheese with cream cheese or ricotta
  • Add a splash of lemon juice and zest for a fresh touch.
  • For extra crunch, you can add some roasted nuts or seeds just before eating.
  • It's better not to use fully ripe avocado if you're eating the salad later in the day, this way it stays nice and firm.
  • Try serving it on toast or in a wrap for a variation.
  • You can replace the salmon for your children or yourself with mortadella or chicken breast

Storage instructionsย 

  • In the refrigerator: up to 24 hours, but shake just before eating to keep the avocado fresh.
  • In the freezer: not suitable for freezing due to the fresh cucumber and avocado.
