What do you need?
Quantity: Decoration for 1 large cake or approximately 12 cupcakes

180 g powdered sugar
20 g light corn syrup
1.25 g pure vanilla extract (¼ tsp)
Gel food coloring (pink, peach, and fuchsia or to taste)
20–30 g water (add gradually until the right thickness)

Preparation method

How do you make this?

Put the powdered sugar, light corn syrup, vanilla extract and a few drops of gel food coloring into a mixing bowl.

Mix with a hand mixer on medium speed until the mixture is airy and smooth. Add water gradually until you have a flowing but firm line consistency (it should hold its shape but still pipe well).

Fill a piping bag with a very fine round nozzle (about 1 mm opening).

Place a sheet of baking paper on a flat baking tray. Pipe long, thin lines next to each other, close together but without touching.

Let the whole thing dry overnight at room temperature in a draft-free place.

Once the lines are completely hard, gently scrape them off the baking paper and break them into small pieces.

Sprinkle the pieces over your cake, cake, or dessert for a cheerful, colorful finish.

Tips

  • Use gel food coloring instead of liquid food coloring, this way the consistency remains perfect.
  • Make multiple colors separately and only mix them after drying for an extra festive effect.
  • Work on baking paper or a silicone baking mat, then the lines will release more easily.
  • Make sure your piping tip is not too large; the thinner the lines, the finer the result as funfetti.
  • Add a pinch of lemon juice for a subtle fresh taste.
