Slice the cucumber and red onion with your KitchenAid food processor into thin slices and place them directly into the jars or sturdy sealable lunch containers.

Add the capers, sesame seeds, pepper, zest, cottage cheese, and dill.

Cut the avocado into cubes and place them on top.

Distribute the smoked salmon over the avocado.

Close the jar.

Tips

  • You can replace the cottage cheese with cream cheese or ricotta
  • Add a splash of lemon juice and zest for a fresh touch.
  • For extra crunch, you can add some roasted nuts or seeds just before eating.
  • It's better not to use fully ripe avocado if you're eating the salad later in the day, this way it stays nice and firm.
  • Try serving it on toast or in a wrap for a variation.
  • You can replace the salmon for your children or yourself with mortadella or chicken breast

Storage instructions

  • In the refrigerator: up to 24 hours, but shake just before eating to keep the avocado fresh.
  • In the freezer: not suitable for freezing due to the fresh cucumber and avocado.
