30 x soup recipes

In the past, soup was an essential part of the menu. Today, there is not a steaming bowl on my table every day, but soup never disappoints me! For little effort, you get masses of flavor and tons of vitamins. Are you looking for a good basic recipe for soup? Do you want to surprise with a cold soup or a soup with toppings? I will give you four reasons why I keep slurping soup, flanked by my favorite soup recipes. Let's go!

#1 Quick and Easy

#1 Quick and Easy

Don’t know how to prepare a healthy meal during a busy evening rush or are you racking your brain for an original holiday activity with your kids? Get your vegetables, cutting board, and soup bowl ready, because making soup is quick and easy. Wash, chop, and sauté the vegetables. Add broth. And hop! Your vegetable soup is simmering. If only everything in life were this easy… No, really, making soup is child’s play. Try my roasted celeriac soup with crispy chickpeas and chervil soup with knackwurst and judge for yourself.

#2 Healthy and Varied

Do you find it a challenge to get your daily portion of vegetables? Not anymore! Soup is packed with vegetables and you can endlessly vary with it. Tomato soup, asparagus cream soup, pumpkin soup,… And guess what, my asparagus cream soup is completely vegan because it actually contains no cream. Perfect for plant-based eaters. Did you know you can combine leftover soup to your heart's content? The possibilities are endless, try it out! Your taste buds will thank you.

#3 Hot or Cold

A warm vitamin boost in the autumn and winter, a refreshing thirst quencher in the spring and summer. Soup is great both hot and cold. Get started with my melon, tomato, and burrata gazpacho or asparagus vichyssoise with mint pesto; I can already tell you that you will fall in love with cold soup. Oh yes! Soup is usually a light starter but can also be a hearty meal soup. Onion soup with cheese toast or chicken broth with shiitake, edamame, and zucchini noodles are two of my favorite meal soups. Satisfaction guaranteed!

#4 Basic or Full Option

#4 Basic or Full Option

With a basic vegetable soup, you can never go wrong. Would you like it to be a bit more adventurous for you and your family? Go for a soup with a topping. Tomato soup with meatballs, chervil soup with scary eyeballs, and tomato soup with meatballs and ginger are Grace's favorites, and I can't blame her. However, I challenge you to give your soup a significant twist. Choose from my pumpkin soup with pumpkin fries, butternut soups with tartufata and hazelnuts, or roasted yellow pepper soup with sun-dried tomato pesto.
