1.5 kg wild boar loin or roast (about 5 centimeters thick)
1.5 tbsp pink pepper
3 tbsp black pepper
fleur de sel
2 tbsp butter

250 g frozen blackberries
2 tbsp cider vinegar
1 tbsp agave syrup
3 cloves
50 ml water
freshly ground black pepper

How do you make this?

Preparation method for wild boar

  • Preheat the oven to 190 °C.
  • Make diagonal cuts 2 millimeters deep on the top or on the skin of the meat. This allows the meat to cook nicely flat.
  • Coarsely crush the 2 types of peppers in the mortar.
  • Press the meat into one side.
  • Melt a knob of butter.
  • Sear the meat first on the peppered side and cook for 2 minutes.
  • Carefully turn and sear the other side for another 2 minutes.
  • Place the meat with the peppered side facing up in a baking dish and bake for another 3 minutes in the oven at 190 °C.
  • Remove from the oven.
  • Let it rest for at least 2 minutes under aluminum foil.

Preparation method for blackberry sauce

  • Put the blackberries together with the other ingredients in a pot with water and let it simmer for 5 minutes.

Tips

Cut the meat into slices and place on a slightly heated board. Serve with sauce.
