800 g cooked squid tentacles
1 onion
Thyme & bay leaf
Pepper and salt

Salad:
1 clove of garlic
Freshly ground black pepper
Sal de Ibiza or fleur de sel
1 teaspoon smoked paprika
4 tablespoons soft extra virgin olive oil
1 lemon
1 kg waxy potatoes

Preparation method

How do you make this?

Place the squid tentacles under water along with the chopped onion, thyme, bay leaf, pepper, and salt. Let it simmer gently for a short time and turn off the heat.

Peel the potatoes and cook them in salted water until tender.

Put one tablespoon of lemon juice in a bowl, along with the olive oil and one grated clove of garlic. Mix everything well and season with pepper and salt.

Mix the warm potatoes and squid with the oil mixture. Place everything in a dish and sprinkle the smoked paprika over it with some extra salt for crunch. Serve with a wedge of lemon.

Tips

If I find padron peppers, I also make it. Baking briefly in olive oil, salt over it and ready!
