What do you need?

Spinach tortilla:
440 gr egg whites
2 handfuls of spinach
120 g whole wheat flour
Pepper and salt
1 tsp garlic powder
1 tbsp olive oil

Peanut oil for frying

Endive lettuce:
300 gr finely chopped endive
2 tbsp yogurt
1 shallot
1 tbsp mustard
2 tbsp rapeseed oil
1 tsp honey
1 tbsp apple cider vinegar
1 handful of pecans
1 handful of raisins

Meatballs:
800g mixed minced meat
1 onion, finely chopped
1 clove garlic, finely chopped
Pepper and salt
1 tsp Raz-el-hanout
0.5 bunch of mint, chopped
0.5 bunch of coriander, finely chopped
1 tbsp olive oil for frying

2 tbsp rapeseed oil
1 tsp honey
1 tbsp apple cider vinegar
1 handful of pecans
1 handful of raisins

Meatballs:
800g mixed minced meat
1 onion, finely chopped
1 clove garlic, finely chopped
Pepper and salt
1 tsp Raz-el-hanout
0.5 bunch of mint, chopped
0.5 bunch of coriander, finely chopped
1 tbsp olive oil for frying

Preparation method

How do you make this?

The batter for the tortillas can be easily and quickly made in a blender or with an immersion blender.

Put all the ingredients in the blender and mix everything until you have a nice even green batter.

Heat a frying pan over the fire with a splash of peanut oil.

Pour a thin layer of the batter into the pan, make a swirling motion with your pan so you have a complete round tortilla. Don't make your tortillas too thick.

Let the tortillas cook on medium heat, not too colored, flip them over and let them cook a little longer.

Fry the rest of the dough like this.

Mix everything for the meatballs together, roll into balls and flatten them a bit.

Fry until golden brown on both sides.

Finely chop the shallot, chop the pecans, and mix them with the raisins in a mixing bowl.

Mix the yogurt, apple cider vinegar, mustard, and honey with the shallot, pecans, and raisins.

Add the endive and mix everything well.

Top the tortilla with a layer of endive lettuce, some crispy slices of bell pepper, and roll it up.
