1 sheet of puff pastry about 24×40 cm
0.5 recipe of pastry cream, cooled
1 tablespoon powdered sugar
Fruit pieces and nuts of your choice for decoration

Preparation method

How do you make this?

Roll out the puff pastry evenly on a baking sheet lined with a non-stick baking mat.

Prick the dough all over with a fork for an even baking result.

Cover the dough with extra baking mats or parchment paper and a baking grill to keep the dough flat and crispy.

Bake for 25-30 minutes in a preheated oven at 180°C.

Let cool without removing the lid.

Trim the edges straight and cut it into 16 equal pieces.

Whip the pastry cream and place it in a piping bag with a plain nozzle.

Assemble each tompouce with alternating layers of puff pastry and cream.

Finish with powdered sugar or fondant sugar for a classic look, or decorate with nuts and fruit pieces for a fancy presentation.

Tips

Use a ruler for equal portions. Experiment with different toppings for a personal touch.
