What do you need?

1 knob of butter
1 large sweet onion
3 cloves of garlic
3 stalks of white celery
1 red bell pepper
1 sprig of thyme
2 bay leaves
1600 g canned cherry tomatoes
1 small jar of tomato paste
1 red apple
Pepper and salt
500 ml or more chicken broth depending on the thickness you prefer

Meatballs:
300 g mixed minced meat
3 to 4 tbsp breadcrumbs
1 small egg
Pepper and salt
Optional some cream and parsley to finish

Preparation method

How do you make this?

Finely chop the onion and garlic, sauté in butter in a large pot.

Meanwhile, cut the washed celery into pieces, as well as the bell pepper, deseeded and de-pitted, add along with the peeled and chopped apple and tomato paste.

Sauté well while stirring.

Deglaze with the tomatoes and broth, season with pepper and salt, thyme, and bay leaves.

Let everything simmer for about 20 minutes, remove the thyme and bay leaves, and blend finely.

Strain the soup so you get a nice creamy soup.

For the meatballs, mix everything well together, roll small balls and add them to the blended soup for an extra delicious full meat flavor.

You can also choose to cook the meatballs briefly in water, skim them off, and add them to the soup.

Finish to taste with some cream and finely chopped parsley.
