Peel the carrots and chop them finely along with the onion.
Sautรฉ them well in the oil for 10 minutes until they are nicely browned. The browner they are, the sweeter the soup will become.
Deglaze with the chicken broth and the tomatoes. Season with pepper and salt and add the ginger, balsamic, thyme, and bay leaf.
Let it simmer gently for 20 minutes.
Remove the thyme and bay leaf.
Blend until completely smooth.
Meanwhile, roll the meatballs and add them to the lightly boiling soup.
Let it cook for another 2 minutes and finish with a bit of cream if desired.
Tips
If you want more a meal soup, add extra lentils, for example. Pits, nuts, seeds are also delicious in soup, and give extra fiber and a satiating feeling.
