2 tbsp olive oil
1 large sweet onion
4 thick carrots
thyme
bay leaf
1 small box of tomato paste
5 cm ginger
500 g canned peeled tomatoes
1 tbsp balsamic cream
400 ml chicken broth
pepper and salt
300 g minced meat

Preparation method

How do you make this?

Peel the carrots and chop them finely along with the onion.

Sauté them well in the oil for 10 minutes until they are nicely browned. The browner they are, the sweeter the soup will become.

Deglaze with the chicken broth and the tomatoes. Season with pepper and salt and add the ginger, balsamic, thyme, and bay leaf.

Let it simmer gently for 20 minutes.

Remove the thyme and bay leaf.

Blend until completely smooth.

Meanwhile, roll the meatballs and add them to the lightly boiling soup.

Let it cook for another 2 minutes and finish with a bit of cream if desired.
