Kitchen must haves
Ingredients

What do you need?

Quantity: 4P

Basic pancake recipe:
200 g pastry flour
500 ml milk
2 eggs
50 g melted butter
Seeds from 2 vanilla pods
2 tbsp coconut blossom sugar
Pinch of salt
Vegetable oil for frying

Vacuum-packed pears:
Per bag:
4 Doyenné pears (be sure to try other varieties too!)
1 tbsp honey
1 star anise and/or stick of cinnamon
Piece of ginger

Decoration:
A few mint leaves
1 jar of coconut yogurt

1 star anise and/or stick of cinnamon
Piece of ginger

1 jar of coconut yogurt

Preparation method

How do you make this?

Vacuum pears: Peel the pears (or not), cut them in half and remove the core.

Place in a bag with all the other ingredients and vacuum seal.

Steam for 45 minutes at 95°C, then place in an ice bath.

Now the pear is ready for use, it is cooked and can be eaten cold or warmed up.

Reheating is also very tasty, by the way.

Pancakes: Put the flour, salt, sugar, and seeds from the vanilla pods in a large bowl.

Add just under half of the milk and whisk everything into a thick smooth batter.

Now add the eggs and mix, then the rest of the milk. Do you have lumps? No panic, just use an immersion blender.

Heat a frying pan over the fire, and add a small splash of vegetable oil.

Let it swirl around well or brush it open with a brush.

When the pan is hot, pour a ladle of batter into the pan and make a circular motion to get a round, even pancake.

Let it cook for a minute, when the top of the batter no longer looks raw, you can flip it and cook for another minute until it looks golden brown.

Continue cooking the rest of the batter until pancakes are done.

Place 2 pancakes per plate, put a dollop of yogurt on each pancake, cut the pears into a fan shape, place them on the pancake as well, and finish off with finely chopped mint.

Be sure to try vacuum sealing with apples, nectarines, pineapples... depending on the season. You will really be happy with this 😊
