Take the lemongrass stalks and cut them lengthwise so they release their flavor well. Place them in the glass bottle.
Cut the ginger knobs into large pieces and add them to the bottle as well. You don't need to peel them.
Add the zest of 1 lime, meaning as much of the fresh green part as possible, and as little of the white part of the peel as possible. The latter is bitter.
Divide the red onion into four pieces and add them to the other ingredients.
Fill the bottle with sushi vinegar.
Seal it, and you have a delicious infused vinegar with Thai notes that is also super beautiful to present in your kitchen.
