Ingredients

What do you need?
Quantity: 6P

1 kg Boskoop apples
40 g butter
100 g fine sugar
1 tbsp shiro miso or genmai miso for a more intense flavor
1 sheet of ready-made puff pastry
0.5 tsp fleur de sel

Preparation method

How do you make this?

Put sugar in a saucepan, let it melt and caramelize, then deglaze with butter.

Stir well, then mix in the miso and pour into the baking pan, sprinkle with salt.

Peel the apples, cut into quarters and remove the core.

Place the apple quarters in a flower shape in the baking pan, covering the entire bottom.

Cut the remaining apples into fine pieces and distribute them over the top.

Lay the dough about a centimeter over the baking pan and loosely fold the rest in.

Prick some holes in it so that steam can escape.

Bake for 30 min in a preheated oven at 200Β°C.

Then lower to 180Β°C and bake for another 15 minutes.

Let it cool slightly, place a flat plate on top of the tart and turn it over.

Tap gently on the bottom so that everything comes loose and remove the baking pan.

Serve slightly warm.

Tips

  • Delicious with a cup of ristretto and a scoop of mocha ice cream!
