A surprising appetizer with raw mussels flavored with Hierbas de Ibiza, avocado, and tomatoes. Perfect for a summer evening!

Open the mussels and detach the foot. Discard the shells.
Peel and pit the tomatoes.
Cut the tomatoes, avocado, and onion into tiny pieces and mix with the finely chopped parsley.
Drizzle a little Hierbas de Ibiza on the mussels and then carefully place some of the avocado mixture on top. Finish with pepper and fleur de sel.
Replacement liqueurs: If you don't have the Ibiza here, you can use another spicy liqueur, such as Ricard, Ouzo or Sambuca. Every liqueur gives a slightly different taste, so feel free to experiment! Alcohol and "yarn": Due to the presence of alcohol in the liqueur, the mussels are "cooked", which means that they are actually no longer completely raw. This can give a finer mouthfeel for some guests.
