Ingredients

What do you need?
Quantity: 4P

1 rabbit of + 1.5 kg cut into pieces
200 g pitted and dried plums
3 thick slices of fresh bacon
1 large onion
1 tablespoon flour
1 tablespoon butter
Thyme & bay leaf
Pepper and salt
2 bottles of geuze at room temperature
2 tablespoons brown sugar

1 rabbit of + 1.5 kg cut into pieces
200 g pitted and dried plums
3 thick slices of fresh bacon
1 large onion
1 tablespoon flour
1 tablespoon butter
Thyme & bay leaf
Pepper and salt
2 bottles of geuze at room temperature
2 tablespoons brown sugar

Preparation method

Cut the bacon into strips and brown them with butter in a cast-iron pot, then remove them. Season the meat with pepper and salt and brown each piece nicely on all sides, set aside.

Add the finely chopped onion and sugar with thyme and bay leaf and sauté until the onion is translucent. Stir in the flour until you can no longer see it, cook for a moment and deglaze with the beer.

Let everything come to a boil, then add half of the plums and the browned pieces of rabbit, let simmer for 30 minutes under a lid and then add the rest of the plums and bacon, let simmer for another 10 minutes, check if the meat is tender, taste and season if necessary.
