This quesadilla with chicken, kidney beans, and cheddar is truly one of those dishes I make when I need something quick, flavourful, and fun. Ingredients

4 quesadillas
250g canned kidney beans
1 large onion
4 cloves garlic
1 tbsp olive oil
1 tbsp tomato paste
250g ground chicken
200g grated cheddar cheese
0.5 bunch parsley
1 tbsp paprika powder
1 tsp cayenne pepper

Garnish
Pickled jalapeño slices
Hot sauce
4 chopped spring onions

4 quesadillas
250g canned kidney beans
1 large onion

1 tbsp olive oil
1 tbsp tomato paste
250g ground chicken
200g grated cheddar cheese
0.5 bunch parsley
1 tbsp paprika powder
1 tsp cayenne pepper


Pickled jalapeño slices
Hot sauce
4 chopped spring onions

Preparation method

How do you make this?

Sauté the finely chopped garlic and onion in the oil, add the ground meat, mash finely and crumbly, and color nicely. Season with paprika, salt, and cayenne pepper, stir in the rinsed beans and finely chopped parsley, taste, and adjust seasoning if necessary.

Lay 4 tortillas open, evenly distribute half of the cheese on top, then spread the ground meat evenly to the edges, and then add the rest of the cheese and possibly the jalapenos, place the other tortillas on top.

Cook the 4 filled quesadillas one by one in a frying pan for 2 minutes, turn them over using a plate or another pan, and cook for another 2 minutes or until the cheese is nicely melted. Place on a board and cut into 6 pieces. Serve immediately with some extra hot sauce and finely chopped spring onion.

Tips

  • You can make quesadillas vegetarian by replacing minced meat with vegetarian minced meat or roughly blending lentils/chickpeas. Fried, finely chopped mushrooms are also very tasty.
