We combine tasty marinated salmon with a soft base of sushi rice and super crunchy daikon (Japanese radish) for that perfect crunch. A quick topping of fresh spring onion and rich furikake finishes it off. Full of vitamins and so very fresh.

The poké bowl
2 bags of Basmati rice
500 to 600 gr salmon fillet without skin or bones
2 spring onions
Furikake
Pickled daikon with ginger

Marinade for the salmon
60 ml soy sauce
1 tbsp rice vinegar
5 ml sriracha
5 ml sesame oil

Cut off any brown pieces from the salmon and cut it into cubes.

Mix all the ingredients for the sauce together and add the salmon to the sauce.

Finely chop the spring onion.

Divide the rice, salmon, and daikon into 4 bowls.

Finish with spring onion and furikake

Tips

  • You can buy Furikake online or in a Thai grocer. Don't have a furikake at home? Make a mixture of finely chopped Nori leaf, crushed sesame seeds, chili flakes and coarse salt.
  • Edamame beans, finely sliced ​​Chinese cabbage or cucumber can also instead the Daikon.
