Rice
300 g whole grain rice
2 tbsp soy sauce
1 tbsp rice vinegar or regular vinegar
1 tbsp sesame seeds

Toppings
1 cucumber
2 thick carrots
3 spring onions

Dressing
2 cooked beets
2 tbsp Greek yogurt
1 tbsp honey
pepper and salt

Radishes
4 radishes
1 tbsp olive oil
pepper and salt
pinch of cinnamon

4 monkfish fillets (150g per person)
knob of butter
4 tbsp mustard
1 bunch of coriander

Preparation method

How do you make this?

Cook the rice according to the package instructions, stir in soy sauce, vinegar, and sesame seeds.

Wash the radishes, cut into wedges, and mix in the oil, pepper, salt, and cinnamon.

Lay open on baking paper and roast for 20 minutes at 200°C.

Wash the cucumber and cut it in half, peel into strips with a vegetable peeler down to the seeds.

Peel the carrot and grate it.

Finely chop the spring onion.

Put all the dressing ingredients in a tall measuring cup and blend finely with an immersion blender.

Cut the monkfish into slices, mix with the mustard.

Let the butter foam in a pan and cook for 4 minutes.

Tips

Let your children invest the rice themselves with what they like 😉 Here at home that cucumber will be carrot, cauliflower and pink dressing, I secretly add a few more pieces of fish 🙂 You can replace fish with an extra vegetable such as finely chopped lettuce.
