150 g mozzarella or fior di latte
30 g parmesan cheese
80 g taleggio cheese
50 g spicy gorgonzola
Black pepper
10 g olive oil

For the preparation of the sourdough dough, take a look here first!
Cut the taleggio, gorgonzola, and mozzarella into small pieces. Open your pizza with a bit of semolina. Distribute the gorgonzola, taleggio, mozzarella, and half of the parmesan cheese over the pizza.
Bake for 7 min at 250°C or 60 to 90 sec at 400°C. After baking, sprinkle the rest of the parmigiano on the pizza and finish with black pepper.
If you bake at home in a preheated oven, start with half the cheese and add the rest for 90 seconds before the pizza is ready.
