Ingredients winter root vegetables (8 people)
3 turnips
2 kohlrabi
6 sunchokes
2 butter turnips
2 parsley roots
1 bunch of radishes

Ingredients dressing
6 tbsp apple cider vinegar
1 tbsp mustard seeds
4 tbsp Mirin
pepper and salt

Preparation method

How do you make this?

Preparation method for vegetables

  • Scrub the vegetables and leave the stems on.
  • Cut all the vegetables, except for the radishes, into 4 or 6 so that you have pieces of approximately equal size.
  • Steam them together until al dente and let cool.
  • Wash the radishes, leave the tails and stems on, and cut them in half.

Preparation method for dressing

  • Crush the mustard seeds in the mortar.
  • Mix with the apple cider vinegar, Mirin, pepper, and salt in a large bowl.
  • Add the radishes and the steamed, cooled vegetables and toss.

Tips

Serve in preserving jars.
