Bring a large pot of salted water to a boil.
Remove the hard stem from each leaf of the kale, chop the kale roughly, and add it to the boiling water.
Let it boil for 3 minutes, drain, and refresh with cold water. Squeeze out a bit of the water.
Put all the ingredients in a blender and blend well.
Add water until it reaches the desired thickness and season with extra pepper and salt.
Cook the pasta al dente, drain, and mix in.
Finish with extra grated Parmesan cheese, pistachios, and lemon juice.
Tips
Also on a pizza instead of tomato sauce, or as a dressing on a salad. If you want a flexitarian dish, fry a piece of salmon or chicken.
