What do you need?

Quantity: 4P (8 pancakes)

200 ml full coconut milk
150 gr. steamed sweet potato in pieces
60 gr. orange lentils, soaked in water overnight
80 gr. almond flour
3 tbsp maple syrup
1 0.5 tsp baking powder
1 vanilla pod
3 eggs

8 small apples

coconut oil for frying

1 tbsp pistachios
0.5 pomegranate
maple syrup

Preparation method

How do you make this?

Put all the ingredients in the blender.

Scrape the seeds from the vanilla pod and add them.

Break 3 eggs into it and mix everything until you get a smooth batter.

Cut off the ends of the apples, remove the core, and slice the unpeeled apples into 1 cm thick slices.

Grease a frying pan with coconut oil, pour the pancake batter into the pan, and spread it evenly with the back of a soup spoon. Lower the heat and let it cook gently until your pancake has a nice color. Flip it over and color the other side as well.

Stack the pancakes on a plate.

Fry the apple slices in coconut oil (or another vegetable oil) until they are nicely colored.
