Put the flour, vanilla sugar, and salt in a large bowl.
Pour in a little more than half of the milk into the flour.
Whisk well together so there are no lumps left.
Whisk in the eggs, the rest of the milk, and the butter. If you still have lumps, strain or mix the batter, and stir in the sparkling water.
Heat a frying pan and add a knob of butter, brush the entire pan with it.
Take a small ladle of batter and pour it into the pan, making a swirling motion with your pan so you have a completely covered bottom of batter.
Don't make it too thick.
Let the pancake color and flip it over, let it cook a little longer.
Place on a plate and cover with another plate to keep them warm.
Grease your pan again each time and cook the batter in the same way.
Serve with sugar, chocolate, or jam.
My favorite is butter, sugar, and fresh lemon juice.
