In this easy one-pan dish, we mix fresh spinach and basil with mascarpone and a good splash of broth to create a velvety smooth, vibrant green sauce. Ingredients

What do you need?
Quantity: 1-2p

Orzo pasta (to preference)
150 g spinach
0.5 bunch of basil
125 g mascarpone
Pepper and salt from the mill
150 ml chicken broth
1 clove of garlic

Roasted tomatoes
300 g cherry tomatoes
4 tbsp mild olive oil
0.5 bunch of basil
1 red, yellow, or green chili pepper
4 cloves of garlic
Pepper and salt from the mill

Topping
125 g feta
A few basil leaves

(to preference)

0.5 bunch of basil
125 g mascarpone

300 g cherry tomatoes
4 tbsp mild olive oil
0.5 bunch of basil
1 red, yellow, or green chili pepper

Preparation method

Cook the orzo as indicated on the package, drain and put back in the pot. Put the spinach, basil, mascarpone, broth, pepper, and salt in a blender, blend finely. Add to the orzo and heat up.

Put the olive oil in a pan and crush the garlic while still in the skin, let it cook for 2 minutes on each side with the chili pepper sliced into rings. Add the tomatoes and basil and let it sauté for 5 minutes while stirring on reasonably high heat, season with pepper and salt.

Pour the orzo into a dish and distribute the tomatoes with the aromatic oil over it. Finish with feta and basil leaves.

Tips

  • Orzo is a popular Greek pasta, and it's also an ideal family dish for children. You can replace the cherry tomatoes with other grilled vegetables if you like.
