Preheat the oven to 150°C.
Fry the ground pork over fairly high heat in a frying pan with the warm butter. Break it up well with a spatula; season with salt, pepper, and cayenne pepper. Let it drain in a sieve.
Dissolve the honey in the vinegar and add the finely sliced red peppers.
Cut the red bell pepper into fine brunoise and roughly chop the coriander.
Divide the nachos among small bowls (or place them in a large bowl to share), sprinkle with grated cheddar, and let melt in the oven for 3 minutes.
Add the meat along with the bell peppers, coriander, and slices of red pepper. Serve warm.
Tips
