In a measuring cup, add the almond flour, matcha, baking soda, and salt. Whisk until the mixture is evenly combined.
Add the maple syrup (or sweetener of choice), coconut oil, vanilla powder, and the egg. Whisk the batter until smooth.
Pour the batter into a microwave-safe mug.
Place the mug in the center of your microwave (this helps the cake rise more evenly) and cook on high for 1-2 minutes. (In a 900-watt microwave, the cake is done after 90 seconds. Adjust the cooking time based on your microwave's wattage – shorten the time for a more powerful microwave and extend it for a less powerful one.)
The matcha mug cake is ready when it rises and a toothpick inserted in the center comes out clean.
Let the cake cool for a few minutes and optionally top with a scoop of ice cream and cherries. Enjoy!
Tips
Add an extra teaspoon of matcha for a more intense taste. Replace the avocado oil with coconut oil for a tropical touch. Serve with fresh fruit or nuts for extra texture and taste.
