Fresh marinated anchovies with lime zest, capers, and rosemary. A light appetizer, ready in 15 minutes!
200 g fresh anchovy fillets 4 tbsp olive oil Zest of lime 1 lime A handful of capers 50 g pickled red onion Pepper 2 sprigs of rosemary
200 g fresh anchovy fillets 4 tbsp olive oil Zest of lime 1 lime A handful of capers 50 g pickled red onion Pepper 2 sprigs of rosemary
Place the anchovy fillets open on a plate.
In a bowl, make a vinaigrette with olive oil, lime zest, and lime juice.
Pour this over the anchovies and finish with capers and pickled red onion.
Season with pepper, not salt. The anchovies are salty enough on their own.
Strip the rosemary from the sprigs and sprinkle over the anchovies.
Serve the anchovies with crispy roasted bread to make the flavors come out optimally. A dry white wine, such as a fresh Sauvignon Blanc, fits perfectly with this dish.
