Roasting the pumpkin: Preheat the oven to 190 °C. Peel the pumpkin, remove the seeds, and cut into pieces. Mix the pumpkin with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until the pumpkin is soft.
Making the pumpkin sauce: Place the roasted pumpkin in a tall measuring cup along with the milk, Parmesan cheese, cheddar, paprika powder, garlic powder, oregano, and a pinch of black pepper. Blend with an immersion blender until creamy sauce.
Cooking the macaroni: Cook the macaroni al dente according to the package instructions. Drain and immediately mix with the pumpkin sauce.
Baking the mac & cheese: Grease the baking accessory of the Optigrill with butter and distribute the pumpkin macaroni in it. Sprinkle with extra grated cheese and gratin on the grill setting, choosing the red color setting.
Making the turkey burgers: Mix the ground turkey with the cranberries, pine nuts, parsley, pepper, and salt. Form small flat burgers.
Grilling the burgers: Set the Optigrill to BBQ mode when the macaroni is ready. Grill the burgers for 3 minutes on each side until they are nicely golden brown and cooked through.
Serving: Serve a portion of mac & cheese on the plate, place a turkey burger next to it, and garnish with a sprig of rosemary. Optionally add a scoop of cranberry sauce for a festive finishing touch.
Tips
Preparation: You can make the Mac & Cheese and Burgertjes well in advance. Store them covered in the fridge and warm up in the oven or on the grill. Vegetarian option: leave the burgers away and serve the Mac & Cheese with a fresh green salad. Extra crunch: Sprinkle some panko or breadcrumbs over the cheese layer for a crispy crust.
