Try this refreshing Lemon Verbena Mojito, a variation on the classic mojito, perfect for hot summer days.
40 ml Bacardi Carta Blanca
1 lime
10 leaves of lemon verbena
15 ml simple syrup (sugar syrup)
6 mint leaves
Crushed ice
Optional: a splash of champagne

Cut the lime into wedges.
Place the lime wedges, lemon verbena, and mint leaves in a tall glass. Add the simple syrup and muddle everything gently with a muddler or the back of a wooden spoon to release the flavors.
Pour in the Bacardi Carta Blanca.
Fill the glass with crushed ice. Tip: If you don't have crushed ice, take a few ice cubes in a towel and hit them with a heavy object until they are crushed.
Stir everything well with a bar spoon.
Top off with a splash of champagne for a festive touch, if desired.
Garnish with a sprig of mint and a slice of lime.
