Kombucha or fermented lightly sparkling tea is a bomb of probiotics and therefore good for gut flora and digestion. A recipe from Sidney!
2 l water
20 g black tea
200 g unrefined sugar
1 scoby (mushroom)

200 g unrefined sugar
1 scoby (mushroom)
Heat the water to 90°C, then add the tea and sugar and let it steep for 20 minutes.
Strain, pour into a clean glass jar and add the scoby. Be careful: The tea should not be warmer than 40°C, otherwise the scoby will die. So wait until it has completely cooled down.
Store at room temperature for about 2 weeks until the flavor is at its maximum.
When it is ripe, pour it into bottles with fruit or herbs of your choice for the second fermentation. Keep cold.
