1 kg sweet potato, peeled
1 tablespoon olive oil
black pepper from the grinder

VEGETARIAN SAUCE
1 sweet onion, finely chopped
3 cloves garlic, finely chopped
200 g vegetarian minced meat
3 tablespoons olive oil
600 g tomato sauce
1 teaspoon chili powder
1 tablespoon paprika powder
400 g canned black beans, rinsed

TOPPING 1
150 g grated Emmental cheese

TOPPING 2: CABBAGE-CARROT SALAD
¼ red cabbage
4 carrots
2 tablespoons vinegar
2 tablespoons rapeseed oil
1 chili pepper, finely chopped
4 spring onions

TOPPING 3
hot sauce
crispy onions

Preparation method

How do you make this?

Preheat the oven to 220 °C.

Cut the potato into slices of half a centimeter and then into sticks. Place the fries on a baking sheet and mix with olive oil. Not too much oil; too much oil will make them soggy. Season with black pepper and roast for about 25 minutes at 220 °C, or until cooked.

Sauté the onion and garlic in olive oil until it smells sweet. Add the minced meat and deglaze with tomato sauce. Season with salt, chili, and paprika powder. Let simmer gently for 10 minutes. Add the beans and let simmer for another 5 minutes. Keep warm.

Grate the cabbage and carrots finely and mix with vinegar and oil, the finely chopped chili, and the spring onions.

Divide the fries among four bowls. Spread them out well. Pour the bean sauce over them, sprinkle the grated cheese on top, and place back in the oven for 5 minutes until the cheese is melted.

Serve at the table and sprinkle the salad on top. Hot sauce and crispy onions all the way.
