1 cup (100 g) gluten-free oats
200 g cottage cheese
4 eggs
1 tbsp honey or agave syrup
1 tsp baking powder
A pinch of salt
2 handfuls of blueberries (fresh or frozen, depending on the season)
2 handfuls of raspberries (fresh or frozen, depending on the season)
1 tbsp honey (for garnish)

Preparation method

How do you make this?

Preparation: Preheat the oven to 190°C and lightly grease a baking dish or bowl.

Mixing: Place the oats, cottage cheese, eggs, honey, baking powder, and a pinch of salt in a blender or food processor. Blend until smooth.

Assembling: Pour the batter into the greased bowl. Evenly distribute the red fruit (blueberries and raspberries) over the batter.

Baking: Bake the bowl for 18-20 minutes in the preheated oven, until the top is firm and lightly golden brown.

Serving: Let the bowl cool slightly, drizzle the extra honey over the top, and serve immediately.

Tips

For an extra crunch you can add some chopped nuts or granola just before baking. Are you in a hurry? You can also prepare the bowl an evening in advance and store it in the fridge. Then fry it the next morning. Try other types of fruit such as strawberries or cherries for variation.
